Sweet Chilli BBQ Spare Rib

This dish is great either on its own or as part of a sumptuous Chinese feast for Chinese New Year.

Ingredients
8 Spare Ribs
4 cloves garlic
1 cube ginger
4 tbsp Blue Dragon Sweet Chilli Sauce
4 tbsp Blue Dragon hoi sin sauce
2 tbsp sugar
2 tbsp Blue Dragon dark soy sauce
2 tbsp vinegar
2 tbsp vegetable oil

Preparation

  1. Finely chop the garlic and ginger and place in a baking tray
  2. In the same baking tray add all the sauces, vinegar, sugar and oil and mix well until the sauce becomes one colour
  3. Add the spare ribs to the tray and massage sauce into the meat
  4. Cover the tray with tin foil

Cooking

  1. Preheat the oven to 180°C
  2. Cook for 20 minutes basting the meat with sauce once in between
  3. After the 1st 20 minutes, turn the meat and cook for a further 20 minutes
  4. Remove from oven and turn the grill to high heat (roughly 230°C)
  5. Once preheated remove the tin foil and place the ribs on a new baking tray
  6. Baste each rib with just enough sauce to cover the meat and keep the remaining sauce aside
  7. Now place the meat tray under the grill for an additional 3-5 minutes. Turn once to allow each side to get a ‘charred’ finish

Serving

  1. Serve with a spoonful of sauce over the top of the meat
  2. Place the remaining sauce in a small bowl on the side – Finely chopped fresh spring onion is an optional addition

Alternatively to make it really simple you can use a jar of Blue Dragon Chinese BBQ Sticky Sauce to make spareribs.

Ingredients
8 Spare Ribs
1 jar Blue Dragon Chinese BBQ Sticky Sauce

Cooking

  1. Preheat the oven to 200°C
  2. Place the ribs in a large pan of water, bring to the boil and simmer for 40 minutes
  3. Drain the ribs and place in a resealable freezer bag, pour over a jar of Blue Dragon Chinese BBQ Sticky Sauce and leave to marinate for 1 hour.
  4. Place the ribs and sauce on a  baking tray and cook at 200°C for approx 20 minutes or until dark and sticky.

Serving

  1. Serve with a spoonful of sauce over the top of the meat
  2. Place the remaining sauce in a small bowl on the side – Finely chopped fresh spring onion is an optional addition
