Succulent Sweet & Sour Vegetables with Egg Fried Rice

Ingredients

1 x 500g jar Uncle Ben’s Original Sweet & Sour sauce
2 x 250g packs of Uncle Ben’s Express Egg Fried rice
200g x baby sweet corn (cut in half length-ways)
150g x sugar snap peas
1 x head of broccoli stalk (stalk removed & head cut into small 2cm pieces)
1 x red onion sliced
1 x clove of sliced garlic
1 x tbsp sunflower oil
Method
- For a great tasty vegetarian meal heat a large saucepan on the stove top, add sunflower oil, sliced red onion and garlic & cook for 1 minute.
- Next, add the broccoli pieces, sweet corn and sugar snap peas & continue to cook for 3 minutes.
- Open the jar of Uncle Ben’s Original Sweet & Sour sauce & pour over the vegetables. Bring to a gentle simmer & cook for a further 3 minutes. Heat the Uncle Ben’s Express Egg Fried rice as instructed on packet.
- Serve the steaming rice into 4 serving bowls & spoon on the sweet and sour vegetables.
Tip: Why not try… adding chopped mushrooms to the mix for an even chunkier vegetable dish.
