Sweet & Sour Chicken and Crunchy Vegetable Stir Fry with PineappleThis mouth-watering back to school recipe from Uncle Ben's is not only packed with tasty, wholesome ingredients to ensure the kids are fully refuelled after a hard day’s studying (and playing chase in the playground!), it takes no more than 30 minutes to prepare and cook.
Serves 4 Ready in 15 minutes
Ingredients
500g jar Uncle Ben’s Sweet & Sour sauce with Extra Pineapple
2 250g pouches of Uncle Ben’s Express Egg Fried rice
450g skinless, boneless chicken breasts, cut into strips
350g small broccoli florets
225g sugar snap peas, trimmed and halved lengthways
2 tsp vegetable oil
2 tbsp water
Method
- Heat the oil in a large wok or frying pan and stir fry the chicken for 5 minutes until it starts to brown. Add the broccoli florets, sugar snap peas and 2 tbsp of water and stir fry for a further 4 minutes
- Pour in the Uncle Ben’s Sweet & Sour sauce with Extra Pineapple and simmer for 3-4 minutes until bubbling.
- Heat Uncle Ben’s Express Egg Fried rice according to the instructions and serve together.
Cook’s tip!
For an even leaner version try using turkey escalopes or breast fillets, cut into strips. Feel free to add any extra veg that your children like
