Here is James’ quick and easy recipe for Stir Fry Chilli and Basil Chicken with Uncle Ben’s Special Fried Express Rice, perfect for a midweek meal for all the family. ![]() Serves 4 2 x Uncle Ben’s Special Fried Express rice Method Roughly chop the garlic and chilli. Put both ingredients in a food processor with a tsp of vegetable oil and blend to a paste. If you do not have a processor place the garlic and chilli on a chopping board and finely mince with a knife, using the side of the blade to make a paste. Place a wok or large non stick frying pan over a high heat for 1 minute, heat the remaining oil and add the garlic and chilli paste. Stir-fry for 10 seconds then add the chicken and beans. Cook for 5 minutes stirring constantly, add the fish sauce, soy sauce, and the remaining chilli sliced on the angle. Continue to cook for 2 minutes. Whilst cooking heat the Uncle Ben’s Special Fried Express rice, add the basil leaves to the pan and stir into the chicken mixture. Serve immediately with the warmed rice.
