Splat Cooking - Flapjacks & Chocolate Banana Muffins
Here are some great recipes to try with the kids from Beverley Glock of Splat Cooking.
Flapjacks
Ingredients: for 12 Flapjacks
- 150g Porridge Oats
- 2 x Tablespoons Demerara Sugar
- 2 x Tablespoons Golden syrup
- 100g Butter
- 50g Raisins or dried cherries or sultanas (optional)
- Pinch of Salt
You will need....... Weighing Scales, Medium Mixing bowl, Medium
Saucepan, Wooden Spoon, Tablespoon, 15 cm square Cake Tin, Wire Rack,
An Adult.
How to make Flapjacks... WASH YOUR HANDS
- GET AN ADULT to turn the oven onto 180oc/350oF/Gas Mark 4 and put a shelf onto the centre runner. (Aga Roasting oven - shelf on oven floor)
- Grease the cake tin using a little of the butter.
- Weigh out the butter and place this in the saucepan, measure the sugar and golden syrup and put these into the saucepan with the butter. GET AN ADULT to place the saucepan on a low heat on the hob until the mixture has melted. Make sure the adult stirs this occasionally and does NOT let it boil.
- Weigh out the Porridge Oats and raisins and place these into the mixing bowl. Add the pinch of salt.
- GET AN ADULT to remove the butter mixture from the heat and pour this into the bowl with the oats. Using the wooden spoon, stir all the ingredients together until it is well mixed in.
- Pour the mixture into the cake tin and press down gently with the back of the wooden spoon to even it out.
- GET AN ADULT to put the cake tin in the oven and bake for 15-20 minutes until the mixture is golden brown.
- GET AN ADULT to remove the tin from the oven and leave to cool for 15 minutes. Cut into squares but leave in the tin until completely cold before removing.
Chocolate Banana Muffins These muffins are really yummy and ever so slightly healthy, thanks to the addition of the bananas. Now you know what to do with those bananas that are too ripe for anyone to eat!! They are really easy and quick to make too.
Ingredients: for 12 Muffins
- 225g Self Raising Flour
- 150g Caster Sugar
- 1 Teaspoon Baking Powder
- 2-3 Ripe Bananas
- 100g Plain Chocolate Chips
- 175ml Milk
- 75ml Sunflower Oil
- 1 Egg
You will need....... Weighing Scales, Medium Mixing bowl, Wooden Spoon,
Two Teaspoons, Sieve, Measuring Jug, Small Bowl, Small Plate, Fork,
Cake or muffin cases, Bun Tray, Wire Rack, An Adult.
How to make Chocolate Banana Muffins... WASH YOUR HANDS
- GET AN ADULT to turn the oven onto 200oc/400oF/Gas Mark 6 and put ashelf onto the centre runner. (Aga Roasting oven - shelf on oven floor)
- Weigh out the flour and using the sieve, sift the flour into the mixing bowl along with the baking powder. Weigh out the sugar and chocolate chips and put them into the mixing bowl. Measure the milk and oil and put them into the mixing bowl. Break the egg into the small bowl (to make sure that you can scoop out any eggshell if you need to) and then pour the egg into the mixing bowl.
- Peel the bananas and mash them with a fork - if they try and escape ask an adult to help you catch them and keep them still. Bananas can be very slippery!
- Put these in the mixing bowl too. Mix everything together with a wooden spoon. It won't look like normal cake mixture, it will look very lumpy and a bit odd, it's meant to look like this, DO NOT try and beat the lumps out.
- Put 12 cake cases into the bun tray.
- Using two teaspoons, divide the mixture evenly between the 12 cake cases.
- GET AN ADULT to put the bun tray into the centre of the oven. Bake for 15- 20 minutes until they pale golden brown.
- GET AN ADULT to take the buns out of the oven and lift them onto the wire rack to cool. These are lovely eaten warm out of the oven or they will keep for 2-3 days in an airtight container.
