Spicy Tomato Beef and Noodles

In this super-speedy recipe, stir fry strips of lean beef with fresh vegetables and Dolmio Extra Onion & Garlic Sauce for Bolognese, then serve with soaked egg noodles.

Spicy Tomato Beef and Noodles

Serves: 4
Preparation time: 15 minutes
Cooking time: 10 minutes

Ingredients
200g dried fine egg noodles
1 tbsp vegetable oil
300g lean beef stir-fry strips
100g mangetout or sugar snap peas, halved
1 red and 1 yellow pepper, deseeded and thinly sliced
1 bunch spring onions, thinly sliced
1 large carrot, cut into matchstick strips
1 x 500g jar Dolmio Extra Onion & Garlic Sauce for Bolognese
Fresh coriander sprigs, to garnish (optional)

Method

  1. Soak the egg noodles in boiling water for 6-8 minutes, or according to pack instructions.
  2. Meanwhile, heat the vegetable oil in a wok or large non-stick frying pan and stir-fry the beef strips for 3-4 minutes, until browned. Add all the vegetables and cook for 3-4 more minutes, stirring constantly.
  3. Tip in the jar of Dolmio Extra Onion & Garlic Sauce for Bolognese and heat until simmering. Lower the heat and cook gently for 2 minutes.
  4. Drain the noodles and share them between 4 warmed bowls or plates. Spoon the beef and vegetable mixture on top and serve garnished with fresh coriander, if using.

Cook’s tips Another time, use pork or chicken stir-fry strips to ring the changes and vary the variety of Dolmio Sauce – try Dolmio Extra Spicy Sauce for Bolognese instead.
