Have Some Fun and Help Out Mum!

Mince Pies

Christmas day will soon be here,
The busiest day for mummy,
So here's your chance to lend a hand
by helping her bake something yummy!

This Christmas, LURPAK® butter has designed a quick and easy mince pie recipe for mum's to help get their kids involved in the preparations for the Christmas dinner. Follow the steps below and instead of the usual cup cakes you bake, try making this delicious festive treat!

Mince Pie Filling
For the filling use bought mincemeat of choice and additional spices to the mincemeat to give fuller flavour.

Mince Pie Pastry
15ozs flour
3ozs caster sugar
Pinch salt
9ozs LURPAK® Unsalted Butter
4 or 5 egg yolks

Method

  1. Place the dry ingredients in a mixing bowl
  2. Rub the butter into these until the mixture resembles coarse meal
  3. Blend together with the egg yolks until thoroughly mixed through. Chill.
  4. Remove from the refrigerator and press out into mince pie tins
  5. The pastry can be rolled out between two sheets of grease proof paper. It is very rich so falls apart quite easily so it is easier to press out.
  6. Using an appropriate sized cutter, cut out tops to fit onto the pies
  7. Drop a spoonful of mincemeat into each of the lined mince pie tins
  8. Place a pastry lid on each little pie. These can be forked in place if they cover the entire mince pie top. Prick gently to release steam when baking.
  9. Mince Pies
  10. Alternatively, simply pop a shaped piece over pastry over the mince pie e.g. star
  11. Bake in oven 400ºC/200ºF for about 15 minutes or until golden brown
  12. Sift a little icing sugar over the top of the pies before serving
  13. Serve hot with brandy butter
