Hearty Chicken
and Vegetable Korma
This mouth-watering back to school recipe from Uncle Ben's is not only packed with tasty, wholesome ingredients to ensure the kids are fully refuelled after a hard day’s studying (and playing chase in the playground!), it takes no more than 30 minutes to prepare and cook.
Serves 4
Ready in 10 minutes
Ingredients
500g jar Uncle Ben’s Korma sauce
2 250g pouches of Uncle Ben’s Express Basmati rice
1 onion, roughly chopped
3 cooked skinless, boneless chicken breasts, cut into chunks
225g small broccoli florets
125g fine green beans, trimmed
2 tsp vegetable oil
Method
- Heat the vegetable oil in a large frying pan and fry the onion for 2 minutes, stirring frequently until it begins to brown. Add the chicken and pour over the Uncle Ben’s Korma sauce and simmer gently for 8 minutes.
- Meanwhile, cook the broccoli and fine green beans in a pan of boiling water for 5-6 minutes until just tender. Drain well and add to the Korma mixture
- Heat two pouches of Uncle Ben’s Express Basmati rice according to the instructions, and serve.
Cook’s tip! For extra freshness, roughly chop fresh coriander and ripe tomatoes then scatter over your cooked rice
