Healthy Stir Fry Recipes

Kick start your healthy eating with these quick and easy stir fry recipes from Uncle Ben's. Stir fries are a quick and easy way to ensure you keep a healthy balanced diet and meet the government's recommendation of eating five portions of fruit and vegetables a day. Uncle Ben's range of Stir Fry sauces and Wok Rice are a fantastic way to create lots of tasty, quick, easy and nutritious meals in just one pan that all the family will love.

Stir Fry Sweet Chilli Pork With Baby Sweetcorn And Red Pepper

Serves: 2
Cooking Time: 13 minutes

Ingredients

200g pork tenderloin, thinly sliced
1 x 150g sachet Uncle Ben’s Sweet & Spicy Chilli Stir Fry sauce
1 x 250g pouch of Uncle Ben’s Basmati Wok Rice
4 spring onions, finely chopped
½ red pepper, deseeded and cut into thin slices
150g baby sweetcorn
1tbsp oil

Cooking

  1. Heat the oil in a wok or a large non stick frying pan, add the pork and stir fry over a high heat for 3 minutes or until browned
  2. Add the spring onions, red pepper and baby sweetcorn and stir fry for 1-2 mins
  3. Add the Uncle Ben’s Sweet & Spicy Chilli sauce, reduce the heat and cook for 5 minutes. Stir in the Uncle Ben’s Basmati Wok Rice and serve immediately

Stir Fry Thai Red Chilli Beef

Serves: 2
Cooking Time: 12 minutes

Ingredients

200g frying steaks, sliced into thin strips
1 x sachet Uncle Ben’s Thai Red Chilli with Coconut and Cream stir fry sauce
1 x 250g pouch Uncle Ben’s Basmati Wok Rice
6 spring onions, thinly sliced
1 small green pepper, deseeded and cut into strips
150g sugar snap peas or mange tout
1 tbsp vegetable oil

Cooking

  1. Heat the oil in a large non stick frying pan or wok. Add the beef and stir-fry for 3-5 minutes over a high heat
  2. Add the spring onions, pepper and mange tout and continue to cook for 3-5mins
  3. Add the Uncle Ben’s Thai Red Chilli with Coconut and Cream stir fry sauce, reduce the heat and cook for a further 1-2 mins. Stir in the Uncle Ben’s Basmati Wok Rice until hot and serve immediately

Oriental Vegetable Rice

Serves: 2
Cooking Time: 7 minutes

Ingredients

1 x 250g pouch Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice
150g sugar snap peas or mange tout
150g baby sweetcorn
1 small red pepper, deseeded and cut into thin strips
1 courgette, thinly sliced
200g button mushrooms, finely sliced
40g unsalted peanuts, roughly chopped
1 tbsp vegetable oil

Cooking

  1. Heat the oil in a large non stick frying pan or wok. Add all of the vegetables and cook over a high heat for 2-3 minutes, until just soft
  2. Add the stir fry vegetables and continue to cook for 1-2mins
  3. Stir in the Uncle Ben’s Oriental Soy Sauce & 5 Spice Wok Rice and cook for a further 1-2 minutes. Spoon into bowls and garnish with peanuts

Speedy Egg Fried Rice With Prawns

Serves: 2
Cooking Time: 8 minutes

Ingredients

125g cooked peeled prawns
1 x 250g pouch Uncle Ben’s Garlic & Herb Wok Rice
6 spring onions, sliced
100g frozen peas, defrosted
2 eggs, beaten
2 tbsp vegetable oil

Cooking

  1. Heat the oil in large non stick frying pan or wok. Add the spring onions and peas and cook for 3-4 minutes. Add the prawns and cook for a further 2 minutes
  2. Add the Uncle Ben’s Garlic & Herb Wok Rice and cook for a further 1-2 minutes
  3. Stir in the beaten eggs and cook for 30 seconds then serve immediately

Oriental Sweet & Spicy Chilli Chicken Stir Fry

Serves: 2
Cooking Time: 10 minutes

Ingredients

2 x 175g skinless chicken breasts, thinly sliced
1 x sachet of Uncle Ben’s Oriental Sweet & Spicy Stir Fry Sauce
1 x 250g pouch Uncle Ben’s Basmati Wok Rice
1 x yellow pepper, deseeded and cut into thin strips
1 x red onion, peeled and cut into thin strips
100g sugar snap peas or mange tout
1 x spring onion, trimmed and sliced diagonally
1 x handful of fresh coriander leaves, torn (optional)
1tbsp vegetable oil

Cooking

  1. Heat the oil in a large non stick frying pan or wok, add the chicken and sugar snaps and stir fry for around three minutes
  2. Add the yellow peppers and red onion and stir fry for further two minutes, keeping the vegetables crispy
  3. Stir in the Uncle Ben’s Oriental Sweet & Spicy Stir Fry Sauce and heat through
  4. Add the Uncle Ben’s Basmati Wok Rice and cook for a further two minutes
  5. Serve, garnished with the sliced spring onion and coriander
