Have fun cooking Sticky Chilli Chicken with Cool Mango Salad or Sweet & Sour Turkey.Using fresh ingredients combined with Uncle Ben’s rice and sauce, these fantastic meals are delicious enough to tempt all taste buds but quick and easy enough to solve any mealtime dilemma.

Sticky Chilli Chicken with Cool Mango Salad

Sticky Chilli Chicken with Cool Mango Salad

Preparation time: 15 minutes
Cooking time: 30-35 minutes
Serves: 4

8 chicken drumsticks
4 tbsp clear honey
1 tsp dried chilli flakes
500g jar UNCLE BEN’S Medium Chilli Sauce
Finely grated rind and juice of 1 lime
Small handful fresh chopped coriander
1 large mango, peeled and cut into thin slices
1 red onion, thinly sliced
1 midi cucumber, halved and sliced diagonally
150g/5oz cherry tomatoes, halved
1 x 60g bag baby leaf salad

  1. Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Slash the chicken drumsticks 2-3 times with a sharp knife and coat in 3 tablespoons honey and chilli flakes.
  2. Place in a roasting tin and pour over the UNCLE BEN’S Chilli Sauce. Roast for 30-35 minutes shaking the pan occasionally until cooked through.
  3. Meanwhile, mix the remaining honey with the lime rind and juice, coriander, mango, red onion, cucumber and cherry tomatoes. Season with salt and freshly ground black pepper.
  4. Just before serving toss with the salad leaves and serve with the sticky chicken drumsticks.

Sweet & Sour Turkey

Sweet and Sour Turkey

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves 4

2 x 200g packed mixed baby vegetables such as carrots, mangetout and baby corn
1 tbsp vegetable oil
350g/12oz turkey escalopes, cut into thin strips
500g jar Uncle Ben’s Sweet and Sour Sauce

Halve the carrots, baby corn and mangetout lengthways. Heat the oil in a wok or large frying pan and fry the turkey for about 3 minutes over a high heat until browned. Add the vegetables and stir fry for 4 minutes. Pour over the Uncle Ben’s sweet and sour sauce and heat gently until piping hot.

Serve with Uncle Ben’s Long Grain Rice.
