Child Proof Recipes For Father's Day

Getting your Dad something different and exciting for Father’s Day that he’ll actually use is never easy – and his sock drawer is already full to bursting point.

This year, rather than struggling for inspiration for something to gift wrap, why don’t you treat him to a tasty meal that he will really enjoy? Dad will think you’ve slaved over the stove for hours but Uncle Ben’s has put together several easy-to-make recipes that take less than 20 minutes to prepare. With the hard work taken out, you can spend the day doing what your Dad wants to do, making him feel truly spoilt.

From Chicken & Cherry Tomato Curry to Baked Ranch Style Eggs with Potato Wedges or Succulent Sausage Burgers, Uncle Ben’s recipes are simple enough for the children to help with but tasty enough for the whole family to enjoy.

Sausage-Meat Burgers/Balls

A really simple but tasty meal for children's supper which is great fun to prepare!

Sausage-Meat Burgers/Balls

Serves 4
Preparation Time: 15 minutes
Cooking Time: 15 minutes
Cost per Serving: £1.09p

Ingredients
500g pork sausage-meat
1 small can sweetcorn
4 spring onions
500g jar Uncle Ben’s Sweet and Sour Sauce

Method

  1. Place sausage-meat in a large bowl
  2. Chop spring onions, including some of the pale green, with pair of scissors
  3. Open can of sweetcorn and drain off any liquid
  4. Soften the sausage-meat (with hands) and mix in the spring onions and half the can of sweetcorn
  5. Divide the mixture into 8 (if you are making burgers) and shape into even, flat cakes OR divide into 16 if you are making balls and roll into good round shapes
  6. If making burgers pre-heat oven to 200ºC and place burgers on a grill rack, cook for 15mins. For the sausage-balls pre-heat a non-stick fry pan and lightly brown the sausage balls, cook for 10-15 mins

Serving Suggestions
Serve burgers on wholemeal baps with some hot sweet and sour sauce. Use the remainder of the sweetcorn in the sweet and sour sauce. Serve sausage-balls with Uncle Ben’s Express Egg Fried Rice

Cooks Tip
When shaping burgers and balls, place prepared shapes on a sheet of cling film. Petits pois can be swapped for sweetcorn

Chicken and Cherry Tomato Curry

This is a really quick meal, the skinless chicken is low in fat and a good source of protein. Plus it provides a good portion of vegetables

Serves 4
Preparation Time: 20 minutes
Cooking Time: 10-15minutes
Cost per Serving £2.50p

Ingredients
2tsp. olive oil
4 skinless chicken breasts
3 sticks celery
250g. cherry tomatoes
1 medium onion
2 tbs mango chutney
1 tbs olive oil
500g jar Uncle Ben’s Medium Curry Sauce

Method

  1. Thinly slice chicken breasts, finely slice celery, peel onion and cut from top to bottom to form 16 pieces, separate petals. Place a small cut in the cherry tomatoes and put in a bowl, pour on boiling water, remove skins and keep tomatoes whole
  2. Put olive oil into a non-stick pan or wok. When hot add a third of the chicken, as it begins to cook add a further third, then the final slices
  3. As the mixture begins to cook add the onion and celery and keep stirring the mixture
  4. Add the mango chutney and the cherry tomatoes, and then add the contents of Uncle Ben’s Medium Curry
  5. Gently mix, trying not to break down the tomatoes

Serving Suggestion
Serve with Uncle Ben’s Long Grain Rice prepared according to the instructions on the pack or as a quick alternative 2 packs of Uncle Ben’s Express Tomato and Basil Rice

Cooks Tip
Courgettes are a good alternative to celery and take less time to cook

Huevos Rancheros –
Baked Ranch Style Eggs with Potato Wedges

An inexpensive and easy meal, this is good if you have little time to cook. The food looks after itself in the oven while you attend to more pressing matters! Leaving the skin on the potatoes increases the fibre content of the meal.

Serves 4
Preparation Time: 10 minutes
Cooking Time: 1 hour
Cost per Serving: £1.16

Ingredients For the baked ranch style eggs:
800g ripe tomatoes, cut into quarters
3 cloves of garlic, finely sliced
500g jar Uncle Ben’s Medium Chilli Sauce
4 eggs
For the potato wedges:
1kg King Edward potatoes, each cut into 8 wedges with the skin left on
1 tbsp olive oil

Method

  1. For the baked ranch style eggs: Scatter the tomatoes and garlic in the bottom of a shallow 2 litre ovenproof dish. Add the Uncle Ben’s Hot Chilli Sauce
  2. For the potato wedges: Mix the wedges together with the oil in a poly bag or bowl, and toss so that they are evenly coated. Spread on to a large baking tray
  3. Bake the tomato and chilli sauce dish and the potato wedges at Gas Mark 6, 400°F, 200°C, 180°C Fan. After 40 minutes remove the tomato and chilli sauce dish from the oven and make 4 gaps in the tomatoes. Break an egg into each gap and return to the oven for a further 20 minutes, until the egg whites are set and the yolks still runny. Cook the potato wedges for I hour until soft in the middle and golden brown

Serving Suggestions
Serve the ranch style eggs hot with potato wedges or with chunks of fresh bread or on soft wheat flour tortillas.

Cooks Tips
Use a spoon to make a well for each egg after breaking them into the sauce. To increase the number of portions use quails eggs and cook for a shorter time.
